First of all, I don't think they would need to remember anything,
since they would perceive the world tilt to the side (as they
accelerated) and their natural balance would cause them to lean to
the uphill side -- just as if they were on a boat at sea, tilting to
the side. Sailors don't have to remember to lean. They just do it.

Speed-up bicycle = world tilts
Slow-down bicycle = world straightens-out

People riding to and from a given poll would be leaning -- as
perceived by an independent observer -- in *opposite* directions.
This is because one would be scrubbing off his spin velocity, and the
other would be building up his spin velocity. To and from the poll,
the riders themselves would lean either *right* both ways, or *left*
both ways. If it is left going uphill to the poll, then it is left
going downhill from the poll.

One poll would be the lean-left poll. The other poll would be the
lean-right poll. If passing on the right were the norm throughout the
sphere, at one poll the bicyclists wheels would pass close as the
riders in opposite directions passed each other. At the other poll,
their heads would pass close.

At one given poll, the riders -- both to-and-from -- would experience
the world tilt to the right.

At the other poll, the riders -- both to-and-from -- would experience
the world tilt to the left.

Motion sickness might result.
