Plants don't seem to care too much about gravity, but it's easy to give
them some gravity if that's wanted for particular species.
Humans need gravity though.

I fully agree. By this point we have spent far too much time studying
the curious effects of microgravity, and not enough (which is to say,
any!) time working in the relatively straightforward engineering
problems of artificial gravity.
When we actually settle space, we will do it in rotating space habitats.
The sooner we get started on that, the better!
