Let's start with the obvious: you can whip a batch of egg whites a
lot higher without gravity. After all, what limits a meringue on
Earth? A good chef using good eggs and good equipment can whip egg
whites until the volume is many times what he started with, the
meringue is more air than egg, and the membranes between the tiny
bubbles are so thin that the whole mass is on the edge of collapsing
under its own weight.

In the orbital kitchen, there isn't any weight to collapse under!
You can just keep whipping your egg whites (or cream, or...) higher
and higher until the bubbles are smaller than red blood cells and
the membranes are only a few molecules thick.

1 1/4 c. sugar
1 c. cake flour
10 egg whites
1 tbs. lemon juice
1 tsp. almond extract
1 tsp. vanilla extract
2 tbs. water
1 tsp. cream of tartar

Preheat oven to 350F.

Sift 1 1/4 c. sugar. Sift again.

Sift cake flour separately before measuring 1 c. Resift the flour 3
times with 1/2 c. of the sifted sugar.

Combine egg whites with lemon juice, almond extract, vanilla extract
& water. Whip until foamy. Add cream of tartar & whip until volume
stops increasing.

Gradually whip in, about 1 tbs. at a time, 1 c. of the sifted
sugar. Sift about a 1/4 c. of the flour/sugar mixture into the
batter while gently folding. Repeat. Continue until all of the
mixture is folded in. (It may be best to use an enclosed batter-
bowl until you develop the skill to do all of this "in the air".)
Form into a free-floating sphere. Insert tube into center & gently
inflate. This should give you a hollow sphere about twice the size
as before inflation. Remove tube. Be careful not to let the cake
deflate.

Bake for 45 min. Do not allow the cake to touch ANYTHING. Let cool
in the air for 1 hour.

Cut precisely in half & fill.* Put the cake back together. Keep
refrigerated (almost but not quite frozen) until ready to serve.
Cut into wedges (like melon) & serve. Do not serve in more than 50%
G, as Archangel Cake is too delicate to support its own weight in
full gravity.

* Chocolate Reindeer & Cranberry/Raspberry Sorbet are good choices.
