What are they?

More precisely, what are the markets that can allow a bootstrapping
process to lead to orbital development?

I have no doubt, that if we put aside the chicken and egg conundrum,
and assume an existing orbital society, then all sorts of markets
will exist, from the mundane, low profit necessities, to the rare,
high value and profitable goods. But those markets will require an
economic infrastructure in orbit.
