While I have no examples (to add to B5 or Gundam) regarding O'Neill
cylinders, I can think of a few with Stanford toruses:
L5: First City in Space. This Imax movie (1996?) is for young
audiences, but depicts an O'Neill cylinder in 3D.
PLANETES, a wonderful anime about blue collar workers cleaning up debris
in orbit. It mentions LaGrange Points as landmarks on occasion, and is
a surprisingly realistic view of life in space, without any silly
robots. Stations orbiting Earth or Moon are depicted as double Toruses
counter-spin to one another.
